Transmission through alcohol extracts of red ripe tomatoes and green tomatoes. Alcohol does not really extract the pigments, but the blender smashed enough cells that the suspension of plant mush had a similar absorbance behavior as a real pigment extract. The difference between the transmittance through pure alcohol and the two extracts is akin to the absorbance of the plant pigments. More here.
